Ingredients

- 1 lb Boneless, skinless chicken breasts
- 2 cans White beans (canned or dried)
- 1 can Green chiles (canned or diced fresh)
- 8 oz Cream cheese
- Salt and pepper to taste
- 4 cups Chicken broth
Instructions
- Gather and prepare all ingredients. Rinse white beans if using dried ones and chop fresh veggies. Place chicken in the slow cooker.
- Cook all ingredients together. Add beans, green chiles, salt, and pepper. Pour enough chicken broth to cover mixture. Set slow cooker to low for 6-8 hours or high for 3-4 hours.
- Shred the chicken and stir in cream cheese. Once cooked, shred chicken in the slow cooker and stir in cream cheese until melted.
- Continue cooking until fully done. Simmer chili an additional 30 minutes to meld flavors before serving.
- Serve and enjoy. Ladle chili into bowls and garnish with cilantro or shredded cheese if desired.
