Description

A comforting and savory chili made with chicken, white beans, and green chiles, perfect for family gatherings.


Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 2 cans White beans (canned or dried)
  • 1 can Green chiles (canned or diced fresh)
  • 8 oz Cream cheese
  • Salt and pepper to taste
  • 4 cups Chicken broth

Instructions

  1. Gather and prepare all ingredients. Rinse white beans if using dried ones and chop fresh veggies. Place chicken in the slow cooker.
  2. Cook all ingredients together. Add beans, green chiles, salt, and pepper. Pour enough chicken broth to cover mixture. Set slow cooker to low for 6-8 hours or high for 3-4 hours.
  3. Shred the chicken and stir in cream cheese. Once cooked, shred chicken in the slow cooker and stir in cream cheese until melted.
  4. Continue cooking until fully done. Simmer chili an additional 30 minutes to meld flavors before serving.
  5. Serve and enjoy. Ladle chili into bowls and garnish with cilantro or shredded cheese if desired.
