Ingredients

- 2 lbs beef chuck roast
- 4 chipotle peppers in adobo sauce
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 onion, chopped
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 tablespoon lime juice
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Add all ingredients to the slow cooker, starting with the beef chuck roast at the bottom.
- Throw in the chipotle peppers with adobo sauce, garlic, onion, broth, cumin, oregano, and lime juice. Season with salt and pepper.
- Set the slow cooker to cook on low for about 480 minutes.
- When done cooking, shred the beef with forks in the slow cooker, mixing with the juices.
- Serve in tacos, burritos, or over rice, and enjoy!
Notes
For leftovers, store in an airtight container. Reheat with a splash of beef broth or water if needed.
