Description

A comforting and flavorful Slow Cooker Beef Barbacoa recipe that transforms a busy weeknight into a warm family dinner.


Ingredients

Scale
  • 2 lbs beef chuck roast
  • 4 chipotle peppers in adobo sauce
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 onion, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Add all ingredients to the slow cooker, starting with the beef chuck roast at the bottom.
  2. Throw in the chipotle peppers with adobo sauce, garlic, onion, broth, cumin, oregano, and lime juice. Season with salt and pepper.
  3. Set the slow cooker to cook on low for about 480 minutes.
  4. When done cooking, shred the beef with forks in the slow cooker, mixing with the juices.
  5. Serve in tacos, burritos, or over rice, and enjoy!

Notes

For leftovers, store in an airtight container. Reheat with a splash of beef broth or water if needed.
