- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 egg
- 2 cups rhubarb, chopped
- 1 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon baking powder
- 1 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- Combine the flour, butter, sugar, and salt in a mixing bowl to form a crumbly mixture.
- Press the mixture into the bottom of the baking pan and bake for 15 minutes.
- Mix together rhubarb, sugar, cornstarch, baking powder, milk, and vanilla until smooth.
- Pour the rhubarb mixture over the crust and spread it evenly.
- Bake for an additional 40-45 minutes until set and lightly golden.
- Let cool before cutting into squares.
Notes
Serve with whipped cream or vanilla ice cream for an extra treat! Can be stored in the refrigerator for 3-5 days or frozen for up to three months.
