Description

Delightful Rhubarb Custard Bars with a buttery crust and creamy filling that celebrate family togetherness.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon baking powder
  • 1 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. Combine the flour, butter, sugar, and salt in a mixing bowl to form a crumbly mixture.
  3. Press the mixture into the bottom of the baking pan and bake for 15 minutes.
  4. Mix together rhubarb, sugar, cornstarch, baking powder, milk, and vanilla until smooth.
  5. Pour the rhubarb mixture over the crust and spread it evenly.
  6. Bake for an additional 40-45 minutes until set and lightly golden.
  7. Let cool before cutting into squares.

Notes

Serve with whipped cream or vanilla ice cream for an extra treat! Can be stored in the refrigerator for 3-5 days or frozen for up to three months.
