Ingredients

- 2 cups chopped rhubarb
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 8 ounces cream cheese
- 1 cup powdered sugar
- 1 cup butter, melted
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
Instructions
- Preheat the oven to 350°F and prepare a 9×13 baking dish by greasing it lightly.
- Combine flour, oats, brown sugar, and melted butter in a mixing bowl. Mix until crumbly.
- Press this mixture firmly into the bottom of the prepared baking dish. Bake for 15 minutes, until lightly golden.
- Prepare the rhubarb filling by combining chopped rhubarb, granulated sugar, and cornstarch in a saucepan. Cook over medium heat, stirring occasionally, until thickened (about 10 minutes).
- Remove from heat, stir in the vanilla extract, and set aside.
- Spread the thick rhubarb mixture evenly over the baked crust. Bake for another 10 to 15 minutes, until bubbly in the center.
- Beat the cream cheese, powdered sugar, and a splash of vanilla extract in a mixing bowl until smooth and glossy.
- Once cooled completely, carefully spread the cream cheese mixture over the rhubarb filling. Chill in the refrigerator for at least 120 minutes to set.
- Slice into squares and serve.
Notes
Store leftovers in an airtight container in the refrigerator for up to a week. Enjoy with ice cream or whipped cream for added indulgence.
