Description

Delightful rhubarb bars layered with rich cream cheese, perfect for sharing and evoking memories of family gatherings.


Ingredients

  • 2 cups chopped rhubarb
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese
  • 1 cup powdered sugar
  • 1 cup butter, melted
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 350°F and prepare a 9×13 baking dish by greasing it lightly.
  2. Combine flour, oats, brown sugar, and melted butter in a mixing bowl. Mix until crumbly.
  3. Press this mixture firmly into the bottom of the prepared baking dish. Bake for 15 minutes, until lightly golden.
  4. Prepare the rhubarb filling by combining chopped rhubarb, granulated sugar, and cornstarch in a saucepan. Cook over medium heat, stirring occasionally, until thickened (about 10 minutes).
  5. Remove from heat, stir in the vanilla extract, and set aside.
  6. Spread the thick rhubarb mixture evenly over the baked crust. Bake for another 10 to 15 minutes, until bubbly in the center.
  7. Beat the cream cheese, powdered sugar, and a splash of vanilla extract in a mixing bowl until smooth and glossy.
  8. Once cooled completely, carefully spread the cream cheese mixture over the rhubarb filling. Chill in the refrigerator for at least 120 minutes to set.
  9. Slice into squares and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week. Enjoy with ice cream or whipped cream for added indulgence.
