Description

Delightful Rhubarb Bars with a creamy cream cheese topping, perfect for family gatherings or quiet evenings.


Ingredients

  • 2 cups chopped rhubarb
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese
  • 1 cup powdered sugar
  • 1 cup butter, melted
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 350°F and prepare a 9×13 baking dish by greasing it lightly.
  2. Combine flour, oats, brown sugar, and melted butter in a mixing bowl. Mix until crumbly.
  3. Press this mixture firmly into the bottom of the prepared baking dish. Bake for 15 minutes, until lightly golden.
  4. Prepare the rhubarb filling. In a saucepan, combine chopped rhubarb, granulated sugar, and cornstarch. Cook over medium heat, stirring occasionally, until thickened, about 10 minutes.
  5. Remove from heat, stir in vanilla extract, and set aside.
  6. Spread the thick rhubarb mixture evenly over the baked crust. Bake for another 10 to 15 minutes, until bubbly in the center.
  7. Beat cream cheese, powdered sugar, and a splash of vanilla extract in a mixing bowl until smooth.
  8. Carefully spread the cream cheese mixture over the rhubarb filling after the bars have cooled completely. Chill in the refrigerator for at least 2 hours to set.
  9. Cut into squares and serve.

Notes

Allowing the bars to chill sets the cream cheese layer beautifully, making slicing easier. Use fresh rhubarb for the best flavor.
