- 2 cups chopped rhubarb
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 8 ounces cream cheese
- 1 cup powdered sugar
- 1 cup butter, melted
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
Instructions
- Preheat the oven to 350°F and prepare a 9×13 baking dish by greasing it lightly.
- Combine flour, oats, brown sugar, and melted butter in a mixing bowl. Mix until crumbly.
- Press this mixture firmly into the bottom of the prepared baking dish. Bake for 15 minutes, until lightly golden.
- Prepare the rhubarb filling. In a saucepan, combine chopped rhubarb, granulated sugar, and cornstarch. Cook over medium heat, stirring occasionally, until thickened, about 10 minutes.
- Remove from heat, stir in vanilla extract, and set aside.
- Spread the thick rhubarb mixture evenly over the baked crust. Bake for another 10 to 15 minutes, until bubbly in the center.
- Beat cream cheese, powdered sugar, and a splash of vanilla extract in a mixing bowl until smooth.
- Carefully spread the cream cheese mixture over the rhubarb filling after the bars have cooled completely. Chill in the refrigerator for at least 2 hours to set.
- Cut into squares and serve.
Notes
Allowing the bars to chill sets the cream cheese layer beautifully, making slicing easier. Use fresh rhubarb for the best flavor.
