Description

A comforting Southern salad that combines macaroni, vibrant roasted red peppers, and a creamy dressing, perfect for family gatherings.


Ingredients

  • 2 cups macaroni
  • 1/2 cup roasted red peppers, diced
  • 1/2 cup peppadews, diced
  • 1/2 cup pepperoncini, sliced
  • 1/2 cup mayonnaise
  • 2 tablespoons mustard
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Chives for garnish (optional)

Instructions

  1. Cook the macaroni according to the package instructions. Drain and let it cool.
  2. Combine the roasted red peppers, peppadews, and pepperoncini in a large bowl.
  3. Whisk together the mayonnaise, mustard, minced garlic, salt, and pepper in another bowl.
  4. Fold the cooled macaroni into the bowl with the mixed vegetables and the creamy dressing.
  5. Chill the salad in the refrigerator before serving.
  6. Garnish with chopped chives before serving.
