Description

A comforting and convenient dish that turns frantic evenings into peaceful family dinners with minimal prep.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup uncooked rice
  • 1 can cream of chicken soup
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese

Instructions

  1. Place chicken breasts in the crockpot, laying flat for even cooking.
  2. Add uncooked rice, cream of chicken soup, and chicken broth, stirring gently to combine.
  3. Cover and cook on low for 5-6 hours.
  4. Shred the chicken directly in the crockpot using two forks.
  5. Stir in cheddar cheese until melted and creamy.
  6. Serve warm, optionally garnished with fresh herbs or hot sauce.

Notes

If using cream of mushroom soup instead, it can add a nice twist. Leftovers can last 3-4 days in an airtight container.
