Description

A refreshing soda that combines the tartness of rhubarb with the sweetness of sugar, perfect for summer afternoons.


Ingredients

  • 1 cup rhubarb, chopped
  • 1 cup sugar
  • 1 cup water
  • 1 cup sparkling water
  • Ice
  • Mint leaves (for garnish, optional)

Instructions

  1. Combine the chopped rhubarb, sugar, and water in a saucepan. Stir gently as the mixture begins to blend.
  2. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes until the rhubarb is soft.
  3. Strain the mixture through a fine mesh sieve to remove solids, creating a rhubarb simple syrup.
  4. To serve, mix 2-3 tablespoons of the syrup with 1 cup of sparkling water over ice. Swirl to combine.
  5. Garnish with fresh mint leaves if desired.
