- 1 cup sparkling water

Instructions
- Combine the chopped rhubarb, sugar, and water in a saucepan. Stir gently as the mixture begins to blend.
- Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes until the rhubarb is soft.
- Strain the mixture through a fine mesh sieve to remove solids, creating a rhubarb simple syrup.
- To serve, mix 2-3 tablespoons of the syrup with 1 cup of sparkling water over ice. Swirl to combine.
- Garnish with fresh mint leaves if desired.
