- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 cups mashed potatoes (store-bought or homemade)
- 1 cup shredded cheddar cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Brown the ground beef in a large skillet over medium heat, crumbling as it cooks until no pink remains.
- Drain excess fat if preferred, or leave a little for flavor.
- Add the chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in the mixed vegetables, tomato paste, Worcestershire sauce, dried thyme, salt, and pepper. Cook for about 5 minutes until the vegetables are tender.
- Spoon the ground beef mixture into the skillet, then top with mashed potatoes, spreading them evenly.
- Sprinkle shredded cheddar cheese on top of the mashed potatoes.
- Cover the skillet and cook on low heat for about 10-15 minutes until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
Notes
Leftovers can be stored in an airtight container for up to three days. Reheat gently to retain texture.
