Instructions
- Gather the petals: First, pick just the sunny yellow dandelion petals. Aim for the blooms only, avoiding any stems or green parts. A little tip: rinse them under cool water to knock off any sneaky bugs or dirt.
- Prepare the water: In a large pot, boil 4 cups of water, and then add those cheerful dandelion petals. Give them a gentle stir.
- Steep the flowers: Cover the pot and let it steep for about 180 minutes. This is where the magic happens, extracting all that vibrant color and flavor.
- Strain the mixture: After steeping, you’ll need to strain the liquid through a fine sieve or cheesecloth. You want to ensure you have about 4 cups of that sweet dandelion tea.
- Combine with ingredients: Return the dandelion tea to the pot and stir in the lemon juice and powdered pectin. Heat this mix to a rolling boil while stirring constantly.
- Add sweetness: Gradually stir in the sugar and honey until everything is dissolved. Allow it to boil for 1-2 minutes, watching as it thickens slightly.
- Fill the jars: Carefully ladle your jelly into sterilized jars. Leave a bit of space at the top and wipe any spills from the rims to ensure a proper seal.
- Seal and store: Place lids on the jars and let them cool at room temperature. Once cooled, you can refrigerate or process them in a boiling water bath for longer storage.
Notes
You can substitute honey with agave syrup for a vegan option. Prep dandelion petals the night before for time-saving.
