- 1 pound ground beef (lean, 85 or 90 percent)
- 8 tortillas (flour or corn)
- 1 cup enchilada sauce (red or green)
- 2 cups shredded cheese (cheddar, Monterey Jack, or blend)
- 1 onion (optional, diced)
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Optional extras: canned green chiles, black beans, corn
Instructions
- Brown the ground beef in a skillet over medium heat, adding diced onions if using.
- Season the beef with garlic powder, cumin, chili powder, salt, and pepper. Drain excess fat if necessary.
- Warm the tortillas in the microwave under a damp paper towel to prevent cracking.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the beef mixture and a sprinkle of cheese, then roll tightly.
- Place the rolled tortillas seam-side down in the baking dish.
- Cover with remaining enchilada sauce and top with more shredded cheese.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, until bubbly and cheese is melted.
Notes
Let the enchiladas cool for a few minutes before serving. They can be easily frozen and reheated later for quick meals.
