Description

Comforting Crockpot Stuffed Peppers filled with savory beef, rice, and rich tomato sauce, perfect for family dinners.


Ingredients

  • 4 large bell peppers (any color)
  • 1 pound of ground beef (or turkey)
  • 1 cup of cooked rice (white, brown, or quinoa)
  • 1 can of diced tomatoes (14.5 oz)
  • 1 cup of shredded cheese (cheddar recommended)
  • 1 tablespoon of Italian seasoning
  • Salt and pepper to taste
  • 2 cups of your favorite spaghetti sauce

Instructions

  1. Prepare the peppers: Slice the tops off each bell pepper and remove the seeds.
  2. Mix the filling: In a large bowl, combine ground beef, cooked rice, diced tomatoes, half of the cheese, Italian seasoning, salt, and pepper. Mix well.
  3. Stuff the peppers: Generously fill each bell pepper with the beef and rice mixture.
  4. Arrange in crockpot: Place the stuffed peppers upright in the slow cooker.
  5. Add sauce: Pour the spaghetti sauce over the stuffed peppers.
  6. Start cooking: Cover and set the slow cooker on low for about 6 hours.
