Ingredients

- 4 large bell peppers (any color)
- 1 pound of ground beef (or turkey)
- 1 cup of cooked rice (white, brown, or quinoa)
- 1 can of diced tomatoes (14.5 oz)
- 1 cup of shredded cheese (cheddar recommended)
- 1 tablespoon of Italian seasoning
- Salt and pepper to taste
- 2 cups of your favorite spaghetti sauce
Instructions
- Prepare the peppers: Slice the tops off each bell pepper and remove the seeds.
- Mix the filling: In a large bowl, combine ground beef, cooked rice, diced tomatoes, half of the cheese, Italian seasoning, salt, and pepper. Mix well.
- Stuff the peppers: Generously fill each bell pepper with the beef and rice mixture.
- Arrange in crockpot: Place the stuffed peppers upright in the slow cooker.
- Add sauce: Pour the spaghetti sauce over the stuffed peppers.
- Start cooking: Cover and set the slow cooker on low for about 6 hours.
Notes
Leftovers taste even better the next day. Store in an airtight container for 3-4 days.
