Ingredients

- 3–4 pounds beef roast (chuck roast)
- 1 packet Italian seasoning
- 1 jar pepperoncini peppers
- 1 cup beef broth (or red wine)
- Optional: sliced onions, bell peppers, or garlic cloves
Instructions
- Prepare your roast by trimming any excessive fat.
- Season generously with Italian seasoning, rubbing it all over the roast.
- Place the seasoned roast into the crockpot.
- Add the pepperoncini on top of the roast.
- Pour in the beef broth (or red wine) around the roast.
- Cook on low for 8 hours (or high for about 4 hours).
- Shred the beef using two forks when it’s done.
- Mix the shredded beef back into the juices before serving.
- Taste-test and adjust seasoning as necessary.
Notes
Leftovers taste even better the next day! Store in an airtight container in the fridge for 3-4 days.
