Description

A comforting dish featuring tender potatoes and smoky sausage, all topped with rich melted cheddar.


Ingredients

  • 1 pound halal smoked sausage
  • 4 cups baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • Optional: 1/2 cup sour cream for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut baby potatoes into halves or quarters and place in a large bowl.
  3. Slice smoked sausage into 1/4-inch rounds.
  4. In a small bowl, mix ranch seasoning, garlic powder, onion powder, and black pepper.
  5. In a large mixing bowl, combine potatoes with olive oil and half of the seasoning mix; toss to coat evenly.
  6. Line a baking sheet with parchment paper and spread the seasoned potatoes in a single layer.
  7. Add sliced sausage on top of the potatoes evenly.
  8. Roast for 35-40 minutes, stirring halfway through until golden brown.
  9. Sprinkle shredded cheese over the dish and return to the oven for an additional 5 minutes until melted.
  10. Garnish with chopped parsley if desired and serve hot, optionally with a dollop of sour cream.

Notes

For slow cooker method: Layer potatoes and sausage, sprinkle seasonings, and add a few tablespoons of low-sodium broth. Cook on low for 6 hours or on high for 3 hours, adding cheese in the last 15 minutes.
