Description

A deliciously easy whole chicken recipe made in a slow cooker, resulting in juicy, tender meat perfect for any occasion.


Ingredients

Scale
  • 1 whole chicken (5 pounds)
  • 1/2 cup soft butter
  • 2 teaspoons dried sage
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon lemon juice
  • 4 cloves garlic, smashed
  • 2 onions, halved
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • Fresh sage leaves (optional)

Instructions

  1. Pat the chicken dry and rub the sage butter all over, under and over the skin.
  2. Season with salt and pepper.
  3. Layer the chopped onions, carrots, and celery in the bottom of the crockpot.
  4. Place the chicken breast-side up on top of the vegetables.
  5. Sprinkle additional sage and butter over the chicken.
  6. Cover and set the slow cooker to low and cook for 6-7 hours.
  7. Check for doneness around hour 5; the chicken is done when the juices run clear.

Notes

Let the chicken rest for a few minutes before carving to help the juices redistribute.
