A deliciously easy whole chicken recipe made in a slow cooker, resulting in juicy, tender meat perfect for any occasion.
Ingredients

- 1 whole chicken (5 pounds)
- 1/2 cup soft butter
- 2 teaspoons dried sage
- Salt to taste
- Black pepper to taste
- 1 tablespoon lemon juice
- 4 cloves garlic, smashed
- 2 onions, halved
- 2 carrots, chopped
- 2 celery stalks, chopped
- Fresh sage leaves (optional)
Instructions
- Pat the chicken dry and rub the sage butter all over, under and over the skin.
- Season with salt and pepper.
- Layer the chopped onions, carrots, and celery in the bottom of the crockpot.
- Place the chicken breast-side up on top of the vegetables.
- Sprinkle additional sage and butter over the chicken.
- Cover and set the slow cooker to low and cook for 6-7 hours.
- Check for doneness around hour 5; the chicken is done when the juices run clear.
Notes
Let the chicken rest for a few minutes before carving to help the juices redistribute.
