- 3 medium beets, roasted and diced
- 1 cucumber, diced
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and roast for about 45 minutes until tender. Allow them to cool, then peel and dice them.
- Combine the roasted beets, diced cucumber, and crumbled feta in a large bowl.
- Whisk together the olive oil, lemon juice, chopped dill, salt, and pepper in a small bowl.
- Drizzle the dressing over the salad and toss gently to combine. Serve chilled or at room temperature.
Notes
Leftovers can be stored in an airtight container for up to three days. Allow to sit at room temperature before serving for optimal freshness.
