Description

A comforting and timeless vanilla cake perfect for Mother’s Day celebrations, uniting family and friends around the table.


Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 1/2 cups granulated sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla bean paste
  • 2 1/2 cups cake flour
  • 1 tbsp baking powder
  • 1 cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. Cream together the softened butter and granulated sugar for about 5 minutes until pale and fluffy.
  3. Beat in the eggs, one at a time, allowing each to incorporate fully.
  4. Stir in the vanilla bean paste until combined.
  5. Sift in cake flour and baking powder in three parts, folding gently until just combined.
  6. Stir in the whole milk until the batter is smooth.
  7. Pour the batter evenly into the prepared pans.
  8. Bake for 30–35 minutes until a toothpick inserted comes out clean.
  9. Cool in the pans for 10 minutes before transferring to a cooling rack, and allow to cool completely before frosting.

Notes

Store any extra cake in an airtight container at room temperature for up to three days. Reheat slices in the microwave for 10-15 seconds for a fresh taste.
