- 8 ounces preferred pasta (such as spaghetti)
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 can of diced tomatoes (14 ounces)
- 1/2 cup ricotta cheese
- 1/4 cup freshly chopped basil
- Salt and pepper, to taste
- Optional: Parmesan cheese for topping
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Use salted water to season the pasta from the start and cook until al dente.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the diced tomatoes (with juice) to the skillet and simmer for about 5-7 minutes.
- Stir in the ricotta cheese and chopped basil, mixing until well combined.
- Toss the cooked pasta with the sauce until thoroughly coated.
- Serve warm, topped with optional Parmesan cheese if desired.
Notes
Check tenderness after 6 hours if using a slow cooker. Use pasta water to help the sauce cling to the pasta.
