Description

Ingredients

  • 4 cups mashed sweet potatoes
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 1 cup pecans, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the mashed sweet potatoes, sugar, milk, melted butter, eggs, vanilla extract, salt, and ground cinnamon. Mix until the texture is smooth and creamy.
  3. Pour the mixture into a greased baking dish, evening out the top with a spatula.
  4. Sprinkle the chopped pecans evenly on top of the sweet potato mixture.
  5. Place the dish in the preheated oven and bake for 25 minutes.
  6. Remove the casserole from the oven and sprinkle the mini marshmallows on top.
  7. Return the dish to the oven and bake for an additional 10-15 minutes, or until the marshmallows are golden brown.
  8. Allow it to cool slightly before serving.
