Ingredients

  • 4 cups Fresh Rhubarb (Substitute with strawberries for a sweeter dessert)
  • 2 cups Granulated Sugar (Adjust quantity if using particularly tart rhubarb)
  • 3 large Eggs
  • 1 teaspoon Vanilla Extract (Optional)
  • 1/3 cup All-Purpose Flour (Can use gluten-free)
  • 1/2 teaspoon Baking Powder (Omit if using a different leavening agent)
  • 1/2 teaspoon Salt (Enhances sweetness)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish to ensure easy removal.
  3. Combine 2 cups of flour, 1/4 cup of sugar, and salt in a large bowl. Cut in the butter until the mixture resembles coarse crumbs. Press this mixture uniformly into the bottom of the baking dish for a sturdy crust.
  4. Bake the crust for about 15 minutes, until it begins to set but does not brown.
  5. Chop 4 cups of rhubarb into small pieces. In a separate bowl, mix the rhubarb with 2 cups of sugar, the remaining flour, baking powder, and eggs. Stir in vanilla extract if using.
  6. Pour the rhubarb filling over the crust, spreading it evenly.
  7. Bake for an additional 30-35 minutes until the filling is set but slightly jiggly in the center and the top is golden brown.
  8. Let them cool completely before slicing into squares.

Notes

These bars taste even better the next day as the flavors meld. Store in an airtight container in the fridge or freeze for longer storage.
