Description

A comforting Southern dish combining savory sausage and tender potatoes, perfect for a family gathering.

Ingredients

Scale
  • 4 cups potatoes, cubed
  • 1 lb sausage, sliced
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • Herbs, to taste (e.g., rosemary, thyme)

Instructions

  1. Preheat your slow cooker or oven to 400°F (200°C).
  2. Wash and chop the potatoes into cubes.
  3. Slice the sausage and chop the onion and bell peppers.
  4. In a large bowl, combine the potatoes, sausage, onion, bell peppers, and minced garlic.
  5. Drizzle with olive oil and add salt, pepper, and herbs.
  6. Toss everything until well coated.
  7. If using a baking sheet, spread the mixture in an even layer; otherwise, add it to the slow cooker.
  8. Bake for 30-35 minutes or slow cook for about 6-8 hours, until the potatoes are tender and the sausage is cooked through.
  9. Serve warm alongside crusty bread for soaking up the juices.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat with a splash of broth or water to keep moist.
