Description

A delightful dessert made with layers of fresh strawberries and rhubarb, creamy pudding, and a buttery graham cracker crust, capturing the essence of family traditions.


Ingredients

  • 3 cups sliced rhubarb
  • 3 cups sliced strawberries
  • 1 cup granulated sugar
  • 2 tablespoons butter
  • 2 tablespoons corn starch
  • 2 cups crushed graham crackers
  • 3/4 cup melted butter
  • 13.4 ounce box instant vanilla pudding
  • 2 cups milk
  • 18 ounce Cool Whip, thawed
  • 1 cup mini marshmallows
  • Sliced strawberries for garnish (optional)
  • Crushed graham crackers for garnish (optional)

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Combine the sliced rhubarb, strawberries, sugar, and butter in a medium saucepan. Cook over medium heat for about 8-10 minutes, stirring often until everything is softened and fragrant.
  3. Whisk in the corn starch and continue cooking for an additional 3-4 minutes, or until the mixture has thickened. Remove from heat and let cool completely.
  4. Mix the crushed graham crackers with melted butter until well combined. Press this mixture into a 9×13 glass baking dish to form an even crust. Bake for about 10 minutes or until golden. Remove from the oven and allow to cool completely.
  5. Prepare the vanilla pudding according to the package directions, using the two cups of milk. Whisk until glossy and smooth.
  6. Combine the prepared pudding, Cool Whip, and mini marshmallows in a bowl. Mix gently to avoid deflating the whipped cream.
  7. Spread the cooled fruit mixture evenly over the graham cracker crust, followed by a layer of the pudding mixture.
  8. Cover the dish and refrigerate for at least an hour before serving to let all the flavors meld together.
  9. Cut into 12 squares and garnish with additional sliced strawberries or crushed graham cracker crumbs, if desired.

Notes

This dessert tastes even better the next day as the flavors meld. Store tightly covered in the refrigerator for up to 3 days.
