Description

Indulge in this comforting Southern classic featuring perfectly seared steak topped with a rich and creamy whiskey mushroom sauce.

Ingredients

Scale
  • 12 pounds steak (filet, ribeye, sirloin, or strip)
  • Cooking oil (olive oil or canola oil)
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1/2 onion, minced
  • 1 clove garlic, finely minced
  • 23 cups sliced fresh mushrooms (crimini or button)
  • 1/8 teaspoon ground nutmeg
  • 3 tablespoons whiskey (or bourbon, beer, or white wine)
  • 1 tablespoon balsamic vinegar
  • 1/2 cup heavy cream
  • 1 tablespoon fresh herbs (chives, parsley, tarragon, or basil)

Instructions

  1. Rub both sides of the steaks with cooking oil and season with salt and pepper.
  2. Preheat a large frying pan over high heat and cook the steaks until they reach your desired doneness (about 5 minutes per side for medium-rare).
  3. Tent the cooked steaks with foil to keep warm.
  4. Add butter to the same pan and sauté the onions until soft.
  5. Incorporate garlic and sauté until fragrant.
  6. Stir in sliced mushrooms, sautéing until browned.
  7. Season with salt, pepper, and nutmeg, then pour in whiskey and balsamic vinegar.
  8. Stir in heavy cream and cook until the sauce is combined and glossy.
  9. Finish with fresh herbs before pouring the sauce over the rested steaks.

Notes

Serve with sides like creamy mashed potatoes or buttery cornbread to soak up the sauce.
