Description

A refreshing and satisfying salad balancing smoky grilled chicken, creamy avocado, and crunchy vegetables, topped with a spicy ranch dressing.


Ingredients

  • 2 grilled chicken breasts, sliced
  • 4 cups Romaine or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, chopped
  • 1 avocado, diced
  • 1 cup tortilla strips
  • 1/2 cup spicy ranch dressing
  • 1 cup corn (optional)
  • 1 can black beans, drained and rinsed (optional)

Instructions

  1. Grill the chicken breast until fully cooked, then slice it.
  2. In a large bowl, combine the lettuce, cherry tomatoes, chopped red onion, and corn and black beans if using.
  3. Dice the avocado and add it to the salad along with tortilla strips.
  4. Top the salad with the grilled chicken slices.
  5. Drizzle with spicy ranch dressing and toss gently to combine.
  6. Serve immediately and enjoy your fresh Southwest salad!

Notes

Store leftovers in an airtight container. Reheat the chicken if preferred, but the salad is delicious cold. Add a splash of lime juice to prevent avocado from browning.
