- 2 grilled chicken breasts, sliced
- 4 cups Romaine or mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, chopped
- 1 avocado, diced
- 1 cup tortilla strips
- 1/2 cup spicy ranch dressing
- 1 cup corn (optional)
- 1 can black beans, drained and rinsed (optional)
Instructions
- Grill the chicken breast until fully cooked, then slice it.
- In a large bowl, combine the lettuce, cherry tomatoes, chopped red onion, and corn and black beans if using.
- Dice the avocado and add it to the salad along with tortilla strips.
- Top the salad with the grilled chicken slices.
- Drizzle with spicy ranch dressing and toss gently to combine.
- Serve immediately and enjoy your fresh Southwest salad!
Notes
Store leftovers in an airtight container. Reheat the chicken if preferred, but the salad is delicious cold. Add a splash of lime juice to prevent avocado from browning.
