- 1 pound ground turkey
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 1 medium onion, diced
- 1–2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano (fresh or dried)
- Salt and pepper to taste
- 1 cup chicken broth (or vegetable broth)
- Optional toppings: shredded cheese, sour cream, avocado, or fresh cilantro
Instructions
- Brown the turkey in a skillet over medium heat until it’s no longer pink.
- Add the browned turkey to your slow cooker.
- Throw in the diced onion, garlic, bell pepper, and stir.
- Include the diced tomatoes (with juice), kidney beans, black beans, chicken broth, chili powder, cumin, oregano, salt, and pepper.
- Set the slow cooker on low and cook for about 300 minutes (5 hours).
- Final touches: Give it a stir before serving, and let it cool slightly to thicken.
Notes
For extra depth, consider adding Worcestershire sauce or diced jalapeños for a spicier kick. Leftovers can be stored in an airtight container for 3-4 days.
