Description
A warm and comforting Italian-American lasagna soup made in a slow cooker, perfect for family gatherings.
Ingredients
Scale
- 1 pound ground beef
- 2 cans diced tomatoes
- 8 ounces lasagna noodles
- 15 ounces ricotta cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
Instructions
- Gather and prepare all ingredients. Start by chopping your onions and garlic, readying your beef for browning.
- Cook the soup base, add noodles. In your slow cooker, brown your ground beef along with the onion and garlic until fragrant. Layer in the tomatoes and seasonings. Once these fragrant notes fill your kitchen, add the lasagna noodles; break them about halfway to fit snugly.
- Continue cooking until fully done and flavors are combined. Cover your slow cooker and set the temperature; 30 minutes before serving, add in the ricotta.
- Serve and enjoy. Ladle your Slow Cooker Lasagna Soup into bowls, and top with cheese.
Notes
Perfectly pairs with fresh bread and a simple salad. Leftovers can be stored in an airtight container in the fridge for up to three days.
