- 3–4 pounds of corned beef brisket
- 1 large head of green cabbage, chopped into wedges
- 6–8 medium-sized potatoes, cut into quarters
- 5–6 carrots, sliced into thick rounds
- 4 cups of beef stock or water
- 1 packet of pickling spices
Instructions
- Add the ingredients to the slow cooker: Place the corned beef at the bottom.
- Sprinkle on the pickling spices: Open that little spice packet and sprinkle it over the meat.
- Add the vegetables: Toss in your carrots and potatoes around the sides of the beef. The cabbage goes on top.
- Pour in the liquid: Cover everything with beef stock or water until it reaches just under the top of the ingredients.
- Cook on low for 480 minutes: Set your slow cooker and walk away.
- Check it out after 480 minutes: Give it a gentle poke with a fork to see if it’s tender.
- Serve it up: Remove the corned beef and let it rest for a few minutes before slicing.
- Plate it all together: Serve with the cabbage, carrots, and potatoes, drizzling a bit of the cooking liquid over the top.
