- 2 boneless, skinless chicken breasts
- 3 bell peppers (any colors)
- 1 onion (yellow, red, or white)
- 1 packet of fajita seasoning
- 1/2 cup chicken broth
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- Slice the bell peppers and onion into thin strips, then add them on top of the chicken.
- Sprinkle the fajita seasoning evenly across the chicken and veggies.
- Pour the chicken broth over everything.
- Cover and cook on low for about 360 minutes, or until the chicken is tender and shreds easily with a fork.
- Transfer the chicken to a bowl and shred it with two forks.
- Toss it back in the slow cooker and mix everything well.
Notes
Serve with warm tortillas and toppings like guacamole, salsa, and shredded cheese. Leftovers can be stored in an airtight container for about three days.
