- 1 pound boneless, skinless chicken breasts
- 2 cups penne pasta
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Place the chicken breasts in the slow cooker.
- Add the penne pasta, cream of chicken soup, chicken broth, diced tomatoes, Italian seasoning, garlic powder, salt, and pepper.
- Stir well to combine all ingredients.
- Cover and cook on low for 4-6 hours or high for 2-3 hours until the chicken is cooked through.
- About 15 minutes before serving, stir in the cheddar and mozzarella cheese until melted.
- Garnish with fresh parsley before serving.
- Serve warm.
Notes
For a lighter flavor, use low-sodium broth. Fresh tomatoes brighten the dish, while mild or sharp cheddar can be used based on preference. Store leftovers in airtight containers, and they can last up to four days in the refrigerator.
