Ingredients

- 2 lbs beef (chuck roast or brisket)
- 3 chipotle peppers in adobo sauce
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 onion, roughly chopped
- 1 tablespoon cumin
- 1 tablespoon oregano
- Juice of 2 limes
- Salt and pepper to taste
Instructions
- Prep the beef: Trim any excess fat from the beef.
- Season the meat: Sprinkle salt, pepper, cumin, and oregano on both sides.
- Chop and add: Toss the onion and minced garlic in the bottom of the slow cooker.
- Chipotle time: Chop the chipotle peppers and add them into the slow cooker along with beef broth and lime juice.
- Set it and forget it: Secure the lid and set the slow cooker to low for about 480 minutes.
- Shred and serve: Once cooked, shred the beef and mix it back into the juices.
- Plating: Serve over rice, in tacos, or in burrito bowls.
Notes
Leftovers can be stored in an airtight container for about three days. Reheat with a splash of beef broth to keep moist.
