Description

A delicious and easy Slow Cooker Beef Barbacoa recipe that brings comfort and flavor to your family dinner table.


Ingredients

  • 2 lbs beef (chuck roast or brisket)
  • 3 chipotle peppers in adobo sauce
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 onion, roughly chopped
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Prep the beef: Trim any excess fat from the beef.
  2. Season the meat: Sprinkle salt, pepper, cumin, and oregano on both sides.
  3. Chop and add: Toss the onion and minced garlic in the bottom of the slow cooker.
  4. Chipotle time: Chop the chipotle peppers and add them into the slow cooker along with beef broth and lime juice.
  5. Set it and forget it: Secure the lid and set the slow cooker to low for about 480 minutes.
  6. Shred and serve: Once cooked, shred the beef and mix it back into the juices.
  7. Plating: Serve over rice, in tacos, or in burrito bowls.

Leftovers can be stored in an airtight container for about three days. Reheat with a splash of beef broth to keep moist.
