A cozy, flavorful chili made effortlessly in a slow cooker. Perfect for those cold nights and gatherings.
Ingredients

- 1 to 1.5 pounds ground beef (or ground turkey)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 (6 ounce) can tomato paste
- 1 (14.5 ounce) can diced tomatoes
- 1 (15 ounce) can crushed tomatoes or tomato sauce
- 2 cans beans, drained (kidney, black, or pinto)
- 2 to 3 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt, plus more to taste
- 1/2 teaspoon black pepper
- 1 to 1.5 cups beef broth (or water)
- Optional: a pinch of sugar, a dash of hot sauce, or a small chopped bell pepper
Instructions
- In a skillet, brown the ground beef with the chopped onion. When it is no longer pink, stir in the garlic for about 30 seconds. Drain excess grease.
- Add the meat mixture to your slow cooker. Stir in tomato paste, diced tomatoes, crushed tomatoes, beans, spices, and broth.
- Cook on low for 360 minutes (6 hours) or on high for 240 minutes (4 hours). I prefer low when I can because the flavor gets deeper.
- Taste and adjust. Add more salt, chili powder, or a small splash of vinegar if needed. If you want it thicker, crack the lid for the last 20 to 30 minutes.
Notes
Chili tastes even better the next day, so consider making a larger batch for leftovers.
