- 1 pound shrimp, peeled and deveined
- 1 pound sausage, sliced
- 1 cup rice
- 1 onion, diced
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped green onions for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the sausage until it has color and some crisp edges.
- Remove the sausage and set aside, keeping some fat in the pot.
- Add onion, bell pepper, and garlic; sauté until softened.
- Stir in the rice and toast lightly for a couple of minutes.
- Add diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper; bring to a boil, then reduce heat and simmer for about 20 minutes.
- Stir in the shrimp and cook until pink and cooked through (3-5 minutes).
- Return the sausage to the pot, stir gently, and let sit for a minute.
- Serve hot, garnished with chopped green onions.
Notes
Use a good-quality sausage for the best flavor. Adjust the Cajun seasoning to taste, and consider adding lemon zest for a fresh finish.
