A quick and satisfying ground beef burrito recipe that’s perfect for busy weeknights.

- 1 lb ground beef
- 1 small onion, chopped
- 2 to 3 cloves garlic, minced
- 2 tablespoons taco seasoning
- 1 tablespoon tomato paste or salsa
- 1 can black beans or pinto beans (optional)
- 1 cup cooked rice (optional)
- 4 large tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- Optional toppings: shredded lettuce, diced tomatoes, pickled jalapenos, sour cream, guacamole, lime
Instructions
- Cook the beef: Heat a large skillet on medium high heat. Add the ground beef and break it up. Cook until it is mostly browned.
- Add onion and garlic: Stir in chopped onion and cook for 3 to 4 minutes until softened. Add garlic and stir for about 30 seconds.
- Season it well: Add taco seasoning and stir to coat the meat. If dry, add a splash of water.
- Make it saucy: Stir in tomato paste and about 1/3 cup water or salsa. Simmer 3 to 5 minutes until thick but not dry. Taste and adjust salt.
- Add extras: Stir in beans or rice if using, and warm through.
- Warm the tortillas: Microwave in a damp paper towel for 15 to 25 seconds, or warm in a dry pan.
- Assemble: Add filling to tortillas, sprinkle cheese, add toppings, fold sides in, then roll tightly.
- Optional crisp finish: Place burrito seam side down in a hot dry skillet for 1 to 2 minutes per side.
Notes
Do not overfill your burritos to avoid tearing the tortillas. If they tear, warm them slightly to make them easier to roll.
