Description
A comforting slow-cooked casserole combining ground beef, rice, and the savory flavor of French onion soup, creating a rich and hearty meal.
Ingredients
Scale
- 1 lb Ground Beef (Lean beef is healthier)
- 3 cups Cooked White Rice (Long grain or jasmine)
- 1 can Condensed French Onion Soup
- 1 cup Sour Cream (Greek yogurt can be used as a lighter alternative)
- 1 cup Shredded Mozzarella Cheese (Gruyère or provolone work for stronger flavor)
- 2 tbsp Butter
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tbsp Chopped Parsley (Optional)
Instructions
- Brown the beef: Cook the ground beef in a skillet over medium heat with 2 tbsp butter for about 6 to 8 minutes.
- Add seasonings: Stir in the onion powder and garlic powder until fragrant, about 30 seconds.
- Combine the base: In the slow cooker, mix the browned beef with the condensed French onion soup and sour cream until creamy.
- Fold in the rice: Add the cooked white rice and mix gently to avoid breaking the rice.
- Slow cook: Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours.
- Finish with cheese: Stir in half of the shredded mozzarella, then sprinkle the remaining cheese on top. Broil for 4 to 6 minutes for a golden finish if desired.
- Garnish and rest: Let the casserole sit covered for 10 minutes before serving. Sprinkle with chopped parsley.
- Serve and enjoy: Scoop into bowls or a serving dish and enjoy with simple sides like salad or green beans.
Notes
For a lighter flavor, use low-sodium broth. You can substitute Greek yogurt for sour cream. Adjust seasonings to taste after cooking.
