Ingredients

- 1 to 1.5 pounds ground beef or ground turkey
- 1 small onion, diced (optional)
- 1 packet taco seasoning or 2 to 3 tablespoons homemade
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chiles or plain diced tomatoes
- 1 can enchilada sauce or 1 cup salsa
- 4 to 6 cups tortilla chips or torn tortillas, lightly crushed
- 2 to 3 cups shredded cheese (cheddar, Mexican blend, or pepper jack)
- Salt and pepper to taste
Instructions
- Brown the meat in a skillet for better texture and flavor. Drain excess grease.
- Layer a little sauce on the bottom of the slow cooker.
- Add chips or tortillas, followed by meat, beans, and veggies.
- Pour more sauce over the mixture and repeat layers until all ingredients are used.
- Top with most of the cheese, reserving some for the last 15 to 25 minutes of cooking.
- Cover and cook on low for 3 to 4 hours if meat is warm, or 4 to 5 hours if starting with room temperature ingredients.
- Let the casserole rest for 10 minutes after cooking before serving.
Notes
For texture, avoid overcooking and add cheese towards the end. Layer chips just right, and let it rest for optimal serving consistency.
