- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
Instructions
- Preheat oven to 350°F (175°C) and prepare baking dishes.
- Mix flour, oats, brown sugar, and melted butter, press into the dish, and bake for 15 minutes.
- Cook rhubarb, sugar, and cornstarch in a saucepan until thick. Stir in vanilla and spread over baked crust, baking for another 10-15 minutes.
- Prepare the cream cheese mixture by beating cream cheese and powdered sugar until smooth, then spread over cooled bars. Chill for at least 2 hours before cutting into squares.
- For the cake, cream butter and sugar until fluffy, then add eggs and vanilla. Combine flour, baking powder, and salt, then add alternately with milk, folding in the rhubarb. Bake for 30-40 minutes or until a toothpick comes out clean. Let cool before serving.
