Description

Delightful Rhubarb Custard Bars that combine the tartness of rhubarb with a creamy custard filling, evoking memories of family gatherings and love shared around the table.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup milk
  • 1/3 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a mixing bowl, combine 1 1/2 cups flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press the mixture into the bottom of the greased baking dish to form a crust.
  4. Bake the crust for 10-12 minutes or until lightly golden.
  5. Remove the crust from the oven and let it cool slightly.
  6. In another bowl, combine the chopped rhubarb, granulated sugar, eggs, milk, 1/3 cup flour, vanilla extract, and baking powder. Mix well until smooth.
  7. Pour the rhubarb mixture over the pre-baked crust and spread it evenly.
  8. Bake in the oven for 30-35 minutes, or until the custard is set and slightly golden.
  9. Allow to cool before cutting into bars.
  10. Serve and enjoy!
