- 1 lb Boneless, Skinless Chicken Breasts
- 3 cloves Fresh Garlic (minced)
- 1 tbsp Italian Seasoning
- 8 oz Cream Cheese (softened)
- 1 cup Chicken Broth (low-sodium)
- 1/2 cup Sun-Dried Tomatoes
- 1/2 cup Parmesan Cheese (grated)
- 2 cups Fresh Spinach
- 1 tsp Pepper Flakes
Instructions
- Plug in your slow cooker and set it to low heat while you gather your ingredients.
- Pat the chicken dry and season with salt, pepper, and Italian seasoning.
- Place the seasoned chicken in the bottom of the Crock Pot and scatter the sun-dried tomatoes on top.
- In a mixing bowl, combine softened cream cheese with chicken broth and blend until smooth.
- Add the fresh spinach on top of the chicken and sprinkle grated Parmesan over everything.
- Cover and let it cook on low for 4 to 6 hours, checking for tenderness when done.
- Shred the chicken with two forks in the slow cooker and stir to coat with sauce.
- Finish with additional Parmesan and pepper flakes before serving.
Notes
For richer flavor, consider searing the chicken beforehand. Store leftovers in an airtight container for up to three days.
