  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) buttermilk, room temperature (or milk + 1 tablespoon lemon juice)
  • 1 cup (227g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar, sifted
  • 1 ½ teaspoons vanilla extract (for frosting)
  • 23 tablespoons heavy cream
  • Pinch of salt (for frosting)
  • 8 oz (225g) fondant, white or ivory (for horns)
  • Edible gold paint or gold luster dust mixed with clear alcohol (like vodka)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 8-inch cake pans and line the bottoms with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt.
  3. Beat the softened butter and granulated sugar together until fluffy.
  4. Add the eggs one at a time, then stir in the vanilla extract.
  5. Gradually mix the dry ingredients into the butter mixture, alternating with the buttermilk.
  6. Pour the batter into the prepared pans.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the cakes in the pans for 10 minutes before transferring to a wire rack.
  9. Beat softened butter for frosting in a bowl, gradually adding powdered sugar, vanilla, salt, and heavy cream until fluffy.
  10. Roll the fondant into cone shapes for the horns and let them dry before painting with edible gold.
  11. Assemble the cake by layering with frosting and placing the golden horns on top.

Notes

For a citrus twist, add fresh lemon or orange zest to the batter. To store, wrap tightly in plastic wrap or place in an airtight container.
