One Skillet Creamy Orzo Chicken

Description

A comforting one-pan meal featuring creamy orzo, tender chicken, and fresh spinach, perfect for busy weeknights.


Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and garlic, and sauté until the onion is translucent.
  3. Add the chicken pieces and cook until browned and cooked through, about 6 to 8 minutes.
  4. Stir in the orzo and chicken broth, bring to a simmer, and cover. Cook until the orzo is tender, about 10-12 minutes.
  5. Lower the heat and stir in heavy cream and spinach. Cook until the spinach is wilted and the sauce is warm.
  6. Remove from heat, stir in grated Parmesan cheese, and season with salt and pepper to taste.
  7. Garnish with chopped parsley before serving and serve immediately.

Notes

For a lighter version, swap half-and-half for heavy cream. Can add lemon juice for tanginess.
