Description

Delicious and charming Linzer Cookie Daisies with a buttery almond base and a sweet jam filling.


Ingredients

Scale
  • 1 cup blanched almond slivers
  • 3/4 cup granulated sugar, divided
  • 2 cups all-purpose flour
  • 1/2 teaspoon table salt
  • 1 tablespoon lemon zest
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 teaspoon pure vanilla extract
  • 2 large egg yolks
  • Powdered sugar for dusting
  • 1/2 cup raspberry jam or lemon curd

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spread the almond slivers on a baking sheet and toast them for about 5 minutes, until they turn golden brown.
  3. Let the almonds cool, then pulse them in a food processor with 1/4 cup of sugar until finely ground.
  4. In a bowl, whisk together the flour, salt, and lemon zest to combine the dry ingredients.
  5. In another bowl, cream the softened butter and 1/2 cup of sugar until the mixture is pale yellow and fluffy.
  6. Stir in the vanilla extract and egg yolks until well combined.
  7. Mix in the ground almonds, followed by the dry ingredients until just combined.
  8. Divide the dough into two halves and refrigerate for 10-15 minutes to chill.
  9. Roll out one disc of dough to about 1/8 inch thickness and cut out daisy shapes with a cookie cutter.
  10. Freeze the cut-out cookies for about 5 minutes, then bake them for 12-16 minutes until lightly golden.
  11. Roll out the remaining dough and cut shapes with holes in the petals.
  12. Freeze the shapes again, then bake for another 12-14 minutes until done.
  13. Allow the cookies to cool completely and dust with powdered sugar.
  14. Finally, spread raspberry jam or lemon curd on the full cookies and sandwich them with the cut-out cookies.

Notes

Store cookies in an airtight container layered with parchment paper to maintain texture. They can be reheated in a low oven.
