Instructions
- In a saucepan, combine chopped rhubarb, sugar, and water.
- Start with a medium saucepan over medium heat, stirring gently.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes until the rhubarb is soft.
- Strain the mixture through a fine mesh sieve to remove solids, creating a rhubarb simple syrup.
- To serve, mix 2-3 tablespoons of the syrup with 1 cup of sparkling water over ice.
- Swirl the mixture gently to combine, and garnish with mint leaves if desired.
