Description

A refreshing and nostalgic drink made with tart rhubarb and sparkling water, perfect for hot days and gatherings.


Ingredients

  • 1 cup chopped rhubarb
  • 1 cup sugar
  • 1 cup water
  • 1 cup sparkling water
  • Ice
  • Mint leaves (for garnish, optional)

Instructions

  1. In a saucepan, combine chopped rhubarb, sugar, and water.
  2. Start with a medium saucepan over medium heat, stirring gently.
  3. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the rhubarb is soft.
  4. Strain the mixture through a fine mesh sieve to remove solids, creating a rhubarb simple syrup.
  5. To serve, mix 2-3 tablespoons of the syrup with 1 cup of sparkling water over ice.
  6. Swirl the mixture gently to combine, and garnish with mint leaves if desired.
