Description

A refreshing Homemade Rhubarb Soda that combines tart rhubarb and sweet sugar to create a bubbly delight, perfect for family gatherings.


Ingredients

  • 1 cup rhubarb, chopped
  • 1 cup sugar
  • 1 cup water
  • 1 cup sparkling water
  • Ice
  • Mint leaves (for garnish, optional)

Instructions

  1. Combine chopped rhubarb, sugar, and water in a medium saucepan over medium heat, stirring gently.
  2. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the rhubarb is soft.
  3. Strain the mixture through a fine mesh sieve to remove solids, pressing the rhubarb to extract all syrup.
  4. Mix 2-3 tablespoons of rhubarb syrup with 1 cup of sparkling water over ice and swirl gently.
  5. Garnish with mint leaves if desired.

Notes

Leftover syrup can be stored in an airtight container in the refrigerator for up to one week. Adjust the sweetness based on the tartness of the rhubarb.
