Description

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup frozen mixed vegetables (peas, corn, carrots)
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • Optional: shredded cheese for topping

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and garlic; sauté until soft and the onion is translucent.
  3. Add ground beef and cook until browned, breaking it into small pieces.
  4. Stir in diced potatoes and bell pepper, cooking for about 10 minutes until potatoes are tender.
  5. Add frozen mixed vegetables, paprika, salt, and black pepper; mix well and cook for an additional 5-7 minutes until heated through.
  6. Garnish with fresh parsley and top with shredded cheese if desired. Serve warm.

Notes

For a creamier finish, add a splash of broth near the end. To prevent gumminess, rinse very starchy potatoes before cooking.
