Ingredients

- 2 cups leftover ham, diced
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks celery, chopped
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Combine the diced ham, white beans, kidney beans, onion, carrots, celery, chicken broth, minced garlic, thyme, salt, and pepper in your slow cooker.
- Stir everything until well mixed.
- Cover the pot and cook on low for 6-8 hours or on high for 3-4 hours.
- Taste the soup and adjust the seasoning as needed.
- Serve hot and enjoy with your family.
Notes
If the soup looks thin at first, it thickens up beautifully as it cools. Serve with crusty bread or a side salad.
