- 2 medium zucchinis, diced
- 1 bell pepper, chopped

- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add chopped onion and minced garlic; sauté until the onion is translucent.
- Add ground turkey; cook until browned and fully cooked.
- Stir in diced zucchini, chopped bell pepper, Italian seasoning, and paprika.
- Cook until zucchini is tender, seasoning with salt and pepper to taste.
- Remove from heat and stir in Parmesan cheese if using.
- Garnish with fresh parsley before serving.
Notes
For a creamy finish, stir in cream cheese or half-and-half. Use low-sodium broth for a lighter flavor. Adjust spices to taste.
