Description

A comforting slow cooker recipe featuring tender chicken and creamy garlic-Parmesan sauce, perfect for busy weeknights.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs Yukon gold or red potatoes, cut into 1-inch pieces
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Chop the chicken into bite-sized pieces and slice the potatoes into 1-inch pieces.
  2. If desired, brown the chicken in olive oil for extra flavor.
  3. Transfer the chicken and potatoes to the slow cooker in a single layer.
  4. In a separate bowl, combine heavy cream, Parmesan, garlic, Italian seasoning, paprika, salt, and pepper. Whisk until smooth.
  5. Pour the mixture over the chicken and potatoes, and stir gently to combine.
  6. Cover and cook on low for 6-7 hours or high for 3.5-4 hours.
  7. Once done, stir gently to combine before serving. Adjust salt and pepper to taste.

Notes

If the sauce is thin at the end, allow it to rest; it will thicken as it cools. Leftovers can be refrigerated or frozen for later meals.
