- 1 cup long-grain white rice
- 2 tbsp unsalted butter
- 1 medium yellow onion, thinly sliced
- 2 cups beef broth (or chicken broth)
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme
- 1/4 cup grated Parmesan cheese (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a medium saucepan, melt the butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, until the onions are golden brown and caramelized, about 15 minutes.
- Add the rice to the saucepan with the onions and stir to coat the grains in butter. Cook for 2-3 minutes until slightly toasted.
- Pour in the beef broth, garlic powder, and thyme. Stir well, bringing it to a boil. Then reduce heat to low, cover, and simmer for 18-20 minutes, until the rice is tender and the liquid is absorbed.
- Remove from heat and fluff the rice with a fork. Stir in Parmesan cheese if desired. Season with additional salt and pepper to taste.
- Sprinkle with fresh parsley and serve warm.
Notes
Leftovers can be refrigerated for up to three days. Reheat gently, adding a splash of broth if needed to maintain moisture.
