Ingredients

- 2 lbs smoked sausage (kielbasa, sliced)
- 1½ lbs baby red potatoes (halved or quartered)
- 1 lb fresh green beans (trimmed)
- 1 medium onion (sliced)
- 4 cloves garlic (minced)
- 1 packet onion soup mix (1 oz)
- 4 Tbsp butter, cut into pieces
- 1½ cups chicken broth
Instructions
- Prep ingredients: Start by slicing the sausage, halving the potatoes, trimming the green beans, slicing the onion, and mincing the garlic.
- Layer: Place the potatoes at the bottom of the slow cooker. Add the sliced sausage, followed by the onion and minced garlic. Top with the trimmed green beans.
- Season: Sprinkle the onion soup mix over the ingredients. Dot with pieces of butter and pour the chicken broth over everything.
- Cook: Cover the slow cooker and set it on LOW for 360–420 minutes or HIGH for 180–240 minutes until the potatoes are tender.
- Serve: Stir the ingredients together, garnish with fresh parsley if desired, and serve warm.
Notes
Feel free to use low-sodium broth for a lighter flavor. Experiment with different vegetables or meats for variety.
