Ingredients

  • 2 lb boneless skinless chicken thighs
  • 2 lb boneless skinless chicken breasts
  • 1/2 cup soy sauce
  • 4 cloves garlic, minced
  • 1/2 cup honey
  • 1 tablespoon fresh ginger, grated
  • Cornstarch (optional, for thickening)

Instructions

  1. Place the chicken thighs and/or breasts in the slow cooker in a single layer.
  2. In a bowl, mix together the soy sauce, minced garlic, honey, and grated ginger. Whisk until smooth.
  3. Pour the mixture over the chicken, ensuring it is well-coated.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks, if desired, and stir back into the sauce.
  6. Serve over rice, noodles, or roasted veggies, and garnish with green onions or sesame seeds.

Notes

For a thicker sauce, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir into the sauce until it thickens. Leftovers can be refrigerated for up to four days or frozen for up to three months.
