- 2 lb boneless skinless chicken breasts
- 1/2 cup soy sauce
- 4 cloves garlic, minced
- 1/2 cup honey
- 1 tablespoon fresh ginger, grated
- Cornstarch (optional, for thickening)
Instructions
- Place the chicken thighs and/or breasts in the slow cooker in a single layer.
- In a bowl, mix together the soy sauce, minced garlic, honey, and grated ginger. Whisk until smooth.
- Pour the mixture over the chicken, ensuring it is well-coated.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with two forks, if desired, and stir back into the sauce.
- Serve over rice, noodles, or roasted veggies, and garnish with green onions or sesame seeds.
Notes
For a thicker sauce, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir into the sauce until it thickens. Leftovers can be refrigerated for up to four days or frozen for up to three months.
